Hello/Roasted Sauteed Mushrooms over Green Bean Puree!


So I was supposed to make my entrance with some sort of epic gravy post, right? It's still coming, but between perfectionism, procrastination, and tonight's outlandishly tasty dinner, I've forced myself to saunter onto the scene with a different savory/chlorophyll-y side dish:

ROASTED SAUTEED MUSHROOMS OVER GREEN BEAN PUREE

Equipment: Immersion blender, roasting pan, sauteeing pan

*6-8 shiitake, golden trumpet, porcini or other tasty fresh mushrooms
*2 hefty handfuls of green beans
*1 small and 1 medium clove of garlic
*1 teaspoon miso or mushroom bouillon
*3 oz warm water, plus water for steaming green beans
*1 T olive oil for sauteeing plus 1 T for oiling mushrooms
*1 t Earth Balance
*black pepper
*a slice or two of good sourdough (I like Bread Alone's whole wheat sourdough)

-Preheat the oven to 350 degrees and start heating the steaming water
-Remove mushroom stems, oil caps, and roast 10 minutes or until fragrant
-While mushrooms are roasting, steam the green beans until vibrant
-Chop green beans into 1/2 inch pieces and put into immersion blender's bowl
-Add miso/bouillon, 1 small clove garlic, and water to blending bowl
-Using immersion blender, puree beans, garlic, and broth into a thick paste. It will be bright green, fragrant, savory, and have the same chlorophyll-y charm of well-prepared kale. Add a little salt or (shh!) tamari if you would like.
-Remove the mushrooms from the oven and cut into very thick strips (1/2 to 1 inch thick)
-Crush the medium clove of garlic with the flat of a knife blade
-Heat olive oil and Earth Balance in heavy-bottomed pan over medium-high heat
-Add mushrooms and stir briskly until coated in the fat, toss in crushed garlic immediately
-Sautee about 4 minutes, until mushrooms absorb fat and become fragrant. Take off heat right away.

Ladle green bean puree into bottom of wide, shallow bowl. Arrange mushrooms attractively over the puree and cover generously with freshly ground black pepper. Serve with sourdough. Listen to Can't record or contemplate the above Russian mushroom festival picture while eating.

I am, in fact, contemplating said Russian mushroom festival picture to questionably Terrence McKenna-esque effect. Intense. Also, "hi!"
